We love nothing better than a sweet treat at the end of the day, so Style Etcetera has teamed up with Instagram fave The Healthy Journey to bring you the ultimate in delectable indulgences that are gluten free, refined sugar free and full of goodness.
Ingredients
Chocolate layer
1 cup coconut oil
125g cacao butter
1 tsp vanilla extract
¼ cup maple syrup
¾ cup raw cacao powder
Nut layer
1/2 cup walnuts
½ cup dry roasted peanuts
2 tbsp desiccated coconut
1 tbsp coconut oil
7 medjool dates
1 tsp vanilla extract
¼ cup cacao nibs
Peanut caramel layer
½ cup peanut butter
1 tbsp coconut oil
1 tbsp maple syrup
Method
Bottom chocolate layer
- Melt coconut oil and cacao butter in the microwave or in a pot.
- Add cacao powder and vanilla and whisk until combined.
- Pour half into lined 8×8 inch tray and place into the freezer until set.
Nut layer
- Place all ingredients (except peanuts) in your food processor or Thermomix and whiz until combined and sticky.
- Add peanuts and whizz for a few second so they are still a little chunky.
- Put on top of the chocolate layer, press down firmly and set aside while you make the peanut caramel layer.
Peanut caramel layer
- Combine all ingredients in your Thermomix, food processor or by hand.
- Pour on top of the nut layer.
- Place in the freezer until it is firm.
Top chocolate layer
- Pour over the remaining chocolate and place in the fridge to set.
- Once set remove from the freezer and slice into portions.
- This slice is best stored in freezer.
