3 Ways To Love Sweet Potato

Not only is this beautiful vegetable a healthy alternative to potato, it can be delicious in more ways than one. Here are three of the best ways to cook sweet potato:

Sweet Potato Mash

INGREDIENTS:
1 whole sweet potato
1/2 cup of skim milk
1 tbsp butter
1 tsp Himalayan rock salt
1 tsp cracked pepper

METHOD:
1. Boil water in a pot.
2. Peel Sweet potato.
3. Cut into chunks.
4. Add to boiling water.
5. After 10 minutes, check if soft by prodding with a knife. If the knife slides in and out with ease – you’re ready to drain the water.
6. Place into a large mixing bowl and crush until there are no chunks.
7. Mix in skim milk to thin out the mix.
8. Mix in tbsp of butter.
9. Add salt and pepper.
10. Ready to be served!

FOOD PAIRING TIP: Marinated lemon and herb chicken breast pieces and a handful of mixed vegetables. Great post workout meal.

Rosemary and Sea Salt Sweet Potato Crisps

1 whole large sweet potato
1-2 tbsp of oil (or coconut oil)
1 branch of rosemary, chopped
sea salt & cracked pepper

METHOD:
1. Preheat fan forced oven to 180 degrees.
2. Peel sweet potato.
3. Cut into chip slices – not too thin.
4. Soak the sweet potato in cold water for at least 20 minutes to remove some starch. This makes them crispier.
5. Drain and dry the sweet potato slices and transfer to a clean bowl.
6. Mix in the oil, chopped rosemary, salt and pepper until coated evenly.
7. Spread them out evenly on a tray covered with baking paper.
8. Bake for 15-20 minutes, flip them over and bake for another 10 minutes.
9. Add more salt and pepper if needed.

FOOD PAIRING TIP: Replace those potato fries with these yummy crisps! Perfect with all meat – or simply on their own!

Caramelised Onion Sweet Potato Chunks

INGREDIENTS:
2 large sweet potatoes
1 large red onion
2 tablespoons olive oil
1/4 cup balsamic vinegar or red wine
4-5 Garlic Cloves, crushed and finely chopped
1 tbsp finely chopped fresh thyme
sea salt & cracked pepper

METHOD:
1. Peel sweet potato, cutting into medium chunks.
2. Thinly slice the red onion, and cook in balsamic vinegar or red wine.
3. Put sweet potato chunks in a bowl, adding oil, salt, pepper and thyme.
4. Ensuring the chunks are coated evenly, they can be cooked on a tray in the oven or on the stove in a frying pan.
5. Cook for 5-10 minutes or until they are cooked through, adding in the red onion mix as you go.
6. Remove from the heat, and they’re ready to be served!

FOOD PAIRING TIP: Tasty alternative to roast potatoes; these sweet potato chunks are beautiful for roast dinners. Great with a red wine, garlic and rosemary gravy.
